OK, so I went back to a snapshot from the 8th of June, with Joomla 4.1.4.
1-> Joomdle 2.0.0 was already installed, and the update to 2.0.1 went perfectly well.
2-> I tried to uninstall joomdle (the component only, just to see) and I got a 500 server error with the following error message:
[30-Jun-2022 11:11:59 Europe/Paris] PHP Warning: require_once(/home/mossieur/staging/components/com_joomdle/helpers/content.php): failed to open stream: No such file or directory in /home/mossieur/staging/plugins/system/joomdlesession/joomdlesession.php on line 11
[30-Jun-2022 11:11:59 Europe/Paris] PHP Fatal error: require_once(): Failed opening required '/home/mossieur/staging/components/com_joomdle/helpers/content.php' (include_path='.:/opt/alt/php74/usr/share/pear') in /home/mossieur/staging/plugins/system/joomdlesession/joomdlesession.php on line 11
So I'll revert back to the working snapshot and continue these testing, and will let you know what comes up in cas it's helpful to you.

OK back to a working snapshot. Uninstalled all of Joomdle components + plugins + modules, etc. All is fine now.
Basically the session plugin has the component as a dependency, so it blocks the whole website if it cannot find the component.
It would be nice if it could fail more gracefully somehow or else that it gets uninstalled automatically when the component is unistalled.
Or something else that could prevent this scenario.
OK, I'll continue my tests

Then...
Uninstalled joomdle 2.0.1 completely on joomla 4.1.4, then updated joomla to 4.1.5 and reinstalled joomdle 2.0.1
=> OK
Uninstalled joomdle 2.0.1 completely on joomla 4.1.5, then updated all my extensions one by one (only the ones that were already installed on that snapshot on the 8th of june) and uninstalled/reinstalled joomdle 2.0.1 each time
=> OK
So now I need to install the new extensions that I added on that snapshot since the 8th of June and try the same process.
There is one in particular: Akeeba Admin PRO which I installed since then and might have configured too "securely".

OK so... after I reinstalled Akeeba admintools with its default configuration, I was able to install Joomdle 2.0.1 with no problem at all.
However, I had a real hard time to install admintools until I found this forum post and applied its counsel => www.akeeba.com/support/admin-tools/36479...s-error.html#p200387
That makes me wonder if I was faced with a somewhat similar situation with Joomdle and some files or db remnants from a previous unstable install/uninstall process

So to close this topic, I don't know exactly what the problem was. Once I backtracked and restored an older version of my website and reinstalled all extensions up to date and stayed on PHP 7.4, Joomdle installed without any problem.
I can't figure out what caused the initial problem. All is well now.

Good to know that you managed to get it working, even if you don't know what the problem was....
Thanks for the suggestion about the plugins: I agree that they should fail gracefully and not break your site, so I'll look into that for next release.
